only two? How are the models put together? is it possible to do things like rotate the upper bodies? or control what appear to be doors or flaps covering those missile launchers? do they have their own bone?

Yes only two, there is no needs in more animations, because all parts is separetly and you can rotate torso hands and other parts You can see the video how it work, if you haven't seen https://www.youtube.com/watch?v=VnRVAcOPOio What kind of animations would you like more?

A jump/falling/land might not be bad if we wanted to include jump jets or some kind of feature like that, maybe run, shutdown, knockdown, something like that.
