Laurus Nobilis: Bay Laurel Laurus Nobilis is an aromatic evergreen tree and shrub native to the Mediterranean region. It is the source of bay leaves, regularly used in cooking. It grows to heights of 20-60 ft, and used to be far more abundant in the Meditteranean basin when the climate was more humid. The leaves are often added whole to season traditional sauces and are removed before serving- however, ground bay leaves are safe to ingest, and are often used in soups, stocks, and even beverages such as bloody marys. In herbal medicine, aqueous extracts of bay laurel have been used as an astringent and salve for open wounds. It is also used in massage therapy and aromatherapy. It has mythic symbolism and importance in Ancient Greece, where it was called Daphne. The tree is considered sacred to the god Apollo, and a wreath of bay laurels was adorned by winners of the Pythian Games.
